Comparison Between Natural and Synthetic Antioxidants in Beef Products: A MetaAnalysis

Synthetic antioxidants are created through artificial synthesis, whereas natural synthesis in plants, animals, and microbes. Although synthetic have been used previously, there has a growing need recent years for antioxidants, largely due to the negative consequences of antioxidants. Therefore, many current studies focused on finding diverse plants. This study aimed compare effectiveness beef products using meta-analysis approach. The method included stages identification, selection, conformity check. selection process resulted 12 articles obtained from electronic database Harzing’s Publish Perish software. metaanalysis model this was random-effect involving positive control group (synthetic antioxidants) an experimental (natural antioxidants). effect size confidence interval were computed OpenMEE software, while summary Egger’s test JASP Results revealed that addition showed comparable quality as indicated by similar values between two groups peroxide value, carbonyl content, metmyoglobin cooking loss, pH, hue angle (P>0.05). Natural higher value b (yellowness) chroma (P<0.05). Parameters indicating lower (P<0.05) occurred TBARS, (redness), L (lightness). In conclusion, demonstrates results could be alternatives
